Savory Fall Scallops

If you’ve visited this page or my Insta then you know I’ve been pretty excited for Fall to say the least. Along with cooler weather, I am always thrilled to get busy in the kitchen with all things Fall. One of my very favorite foods to eat are scallops and I love experimenting with different kinds of recipes that involve them.

For today’s Perfectly Plated, I’m making Broiled Scallop Gratin with Pumpkin. I deeply love French Cuisine so this seasonal recipe was right up my alley. Before you attempt it, it’s important to know exactly what Gratin is. It sounds fancy (and is) but really isn’t hard to make. To the right is a little vocabulary lesson on exactly what is being made.

Broiled Scallop Gratin with Pumpkin

6 sea scallops

2 Tbsp butter

1/2 white onion

5 baby Portobello mushrooms

1/2 cup milk

1/4 cup pumpkin puree

1/2 tsp cayenne pepper

1/2 nutmeg

1/3 cup parmesan cheese

fresh chives for garnishing

This is so fancy-simple! When you’re cooking scallops always make sure you rinse them well and then pat them dry. After patting them, just sprinkle them with sea salt and put in the fridge until you are ready for them.

In a large pan, heat 1 Tbsp over medium heat. After the butter melts, throw in your onion and sauté for a couple minutes then add the sliced mushrooms. After the mushrooms are cooked divide this mixture into two ramekins.

Add the last Tbsp of butter to the pan and put the heat to low add in the milk and pumpkin and whisk until creamy. Then, season the mixture with cayenne, salt, and nutmeg. Remove from heat and turn on your broiler.

Set scallops on top of your onion/mushroom mix and pour the pumpkin mixture around (but not on top of) the scallops. After this, divide your parm cheese onto both ramekins. Broil these for about 7 minutes but don’t let your scallops get too brown. After these come out of the oven and cool for a couple minutes add the fresh chives and enjoy!

Your Superhero Piece

I always like to start the week off with a hot (and strong) coffee and a good dose of fashion.

In my Fall Fashion post I talked about how much I love a cape look. It has been a fashion staple of mine for years but I have really been loving seeing the fabulous cape on so many runways for the 2018 fall/winter season. The cape truly does speak to me so I’m giving you five reasons to get on board with my favorite trend this season.

  1. If you like the coat draped over your shoulders look but actually need to move your arms the cape will let you do this and still look chic. No need to be worried if your coat is going to slip off your shoulders.

  2. It will truly elevate any look. Use it to dress up your jeans (like I did in my fall fashion post), or really kick your skirt or dress outfit up a notch.

  3. The cape is a great alternative to a blazer if you are looking to switch it up.

  4. Make your all black look a little more interesting. MK and I usually wear black to weddings when we are working and sometimes that can get a little boring. I mean I LOVE an all black look but adding a cape keeps it very chic and more interesting.

  5. Why not feel like a modern day superhero?

Chic & Boozy

Hello Friday and hello weekend I'm so ready for you! Mostly because its our last one off in a loooooooooong time. 

It's no secret that Fall Fashion is on my brain and I'm pretty much living for it right now. So for today's Martini Moment, I bring you a chic DIY and a very fun and potent drink recipe.

I've said it a million times: I love feathers!! So when they are on the runways I basically freak out. And there are a lot of feathers on the runways for this season. Today, I'm sharing a fun way that you can make your own earrings with the feather trend because not only are feathers on garments they are on accessories! This DIY is quick and so SO trendy!

Here is what you need: 

(I went to Hobby Lobby) 

Wire of your desired color

Your choice of feathers and beads

Wire cutters

E6000 glue

J Hooks

Simply cut your wire as big or small as you'd like your earring. Then, loop your feathers through the wire (with these, from Hobby Lobby you can adjust the plastic loop at the top), add some beads on the sides, and then glue your wire circle with the E6000 glue (or solder if you're confident enough which I was not). After that, snap your circle into your J Hook. Boom! Chic and ready for date night!

But what's date night without a drink before you walk out the door?!  

You guys, beware this drink is strong. Tasty but strong. I love Chambord so I thought it would be such a cool drink recipe.

Simply add everything except the cherry to a martini shaker over ice minus the cherry and strain into a martini glass.
