Look Ahead

I am always trying to learn new and useful things and want to share them with you over a martini on Fridays but today's Martini Moment is more like a "no duh" moment that I had. Since I was talking so much about being prepared, on Sunday I told myself I would pick out three to four outfits in advance. I'm not going to lie there have been way too many times through the week where I'm running around like a loon because my outfit wasn't right or I couldn't decide. So why haven't I been doing this for like ever? Great question. I don't know, but guys, it's life changing. Especially If you're always on the go like me.

From the time I wake up at 6:00am I have exactly three hours and 15 minutes to make MK breakfast, workout, take the dogs out twice, make myself breakfast, shower and get ready, look nice and get out the door. Having chosen my outfits on Sunday I swear I'm so much more relaxed and even though I'm still movin' fast, the outfit is no issue. I sure will be adding this to part of my Sunday routine.

So there it is. I really have learned that the more prepared you are for the week the less stressed you'll be and I'll drink to that.

Ready For Dinner

I suppose I've decided to make this week all about being ready. How could I not touch on food? On Sunday, while meal planning, I was browsing through "Cooking Light" and came across this super different and fast recipe. I've never cooked with Polenta and was so excited to try something different! 

The flavors were such an interesting pairing! I loved this recipe! The meatballs had a sweet heat to them and it went so great with the creamy Polenta. Turns out that cooking with this is pretty easy.  

Here is the recipe! 

  • 3 cups chicken stock
  • 1/4 tsp salt
  • 1 tbsp butter
  • 1 1/4 pound ground 93% lean turkey
  • 2 tbsp oil
  • Cooking Spray
  • 1/4 cup water
  • 1/4 cup ketchup
  • 2 tbsp Sriracha
  • 1 1/2 soy sauce
  • 1 1/2 tp Worcestershire sauce

First bring stock and salt to a boil on medium high heat and slowly add Polenta and consistantly whisk it. Reduce heat and let simmer for 25 minutes, or until Polenta is thick. Add butter and stir until melted. In a bowl combine turkey and oil (I left this step out, just turkey for me), make as many meatballs as you can. Coat a different pan with cooking spray and add the meatballs and cook. Take the meatballs away and add 1/4 to the pan then add the reat of your ingredients to pan, stir with whisk and bring to boil. Return turkey balls and lower heat. Serve them over the Polenta.

I feel like the takeaway from this, is to always try new things and expand your horizons. I will deffianetly use this recipe in the future!  

Note: If you wanted a more traditional meal, use rice instead of Polenta.  

Serves 4 (serving size: 1/2 cup Polenta, 5 meatballs. Calories 428 per serving)

It seems there has been a tone set this week with having your act together. I have always felt that it was so important to be prepared. As much as possible. Because if it's one thing I've learned it's that the unexpected can happen at any moment. In my desk at work I always have a "Just In Case" bag. You never know when there will be a random rip in your clothes, stain, headache, or an "omg I'm too tired to make it through the day" moment.
