Meatless Favorites

During Lent for many years, I give meat up. But not fish. One time I gave it up for Lent and didn’t eat it again for three years only to break it on my honeymoon.

So this year I did the same. Only fish no meat. When Lent was over I decided to start The Mediterranean Diet. Very up my ally. I thought I would share with you three very easy recipes that were constantly in my rotation. These would be perfect for a Meatless Monday!

This is so easy and delicious! All you do is spread the sweet potato on your wrap an and add everything else. I sprinkled with garlic salt because, well, I do that with everything.

Again this is so easy and ready in minutes! Simply toss everything but the cheese in some olive oil and cook until he peppers are blistered. When done, add the cheese so it gets a little meaty.

I love tuna steaks in my soul and eat them regularly. For this salad just assemble as you would any other salad. And after the tuna steak is thawed, season with whatever you want, no surprise here I use garlic. With a little oil in the pan, on high heat, sear the steak on both sized for about two minutes. I like a more rare tuna but if you prefer it well done aim for about four minutes on both sides.

My Ideal Sunday

Hello and Happy Monday Friends!

My weeks are admittedly very busy even if I don’t have many things to do outside of the house. I’ve done posts before about being ready for the week but my ways of preparing are always changing as life does. On Sunday’s I take total advantage of MK being able to watch the Kilgore Kids tat keep me exceptionally busy throughout the week. I often times don’t have time for much else than Mothering. I wanted to share the things I do on my ideal Sunday that helps me be very prepared for the week ahead.

I clean like crazy.

I start at the top in my closet because it gets the least cleaning love throughout the week. Since it, and my kids floors are all hard floors, I clean those. But listen, I must tell you about the most life changing floor cleaner. The Shark VACmop. Just go buy it if your house doesn’t have a lot of carpet. I’m obsessed. I used to change sooo many Swifters cleaning floors. No more of that. This vacuums and wet cleans the floor at the same time. Again, life changing. Just about every Sunday I detail the kids rooms, I also do the sheets in everyone’s room and the all the towels.

Collect the laundry

Monday’s are my laundry day so I make sure I have everyone’s laundry ready to go so one of the first things I can do in the morning is start the laundry.

Meal Prep

This one is so important for me because I am so busy through the day I sometimes don’t have time to eat. So when I have the time to prep breakfast and lunch I do it. That way I know I’m going to eat well and not mess up the kitchen too much.

Put together a few outfits

I always look at my schedule for the week and pull some outfits for any appointment I might have. Even if I have nothing scheduled something usually comes up and I don’t have to think about what I have to wear and can just throw on what I have pulled.

Plan some dinners

I aim to always have three dinners for the week planned. Again, I look at my (color coded, I’m like a little organized) planner to see how many shoots MK has and what kind of dinner is better. Some nights are better for a slow cooker situation, depending on when he’ll be home.

This is just what works for me, but I find that as much as you can prepare for the week that’s coming the smoother it will go.

Wear Your Spring

Happy Tuesday Friends!

Not matter what the season, I’m always happy to welcome a new one. I think Spring always feels like the shortest season because even when it’s still technically Spring the weather starts to feel like pretty quickly like Summer. So what does that means for our Spring wardrobes? For me, it means a lot of pieces don’t get to be worn.

While I was just spring cleaning my closet and going through a lot of things, I decided to not allow my favorite Spring pieces to not get loved. In order to not forget about those outfits, I put some together! I put together four outfits that I plan to wear before it gets too warm for them. Here are just a few pieces I pulled to make sure they got worn. The first was a cape with a feather collar that I’ve had for a long time and never got to wear.

Next up was may Spring coat that my Mom and I made. I’ve talked about this one before but you better believe I’ll wear it as many times as I can before it gets too warm out. It’s great to dress up or down. Perfect to elevate jeans and a white tee.

Then, there was one of my long very lightweight coats that I love but again sometimes I forget I have or the weather isn’t right. The day I wore my green coat it was the perfect amount of chilly out.

p.s. I ironed it. Really couldn’t tell you why it looks not ironed. Life is hard.

Lastly, I have this fabulously soft sweater set that I wore for Easter. You can’t get away with this one if its too toasty out. But believe me, it’s so soft I could have slept in it. Which is exactly what I wanted to do after the Easter food.

Also family pictures are also very hard with a one and three year old.
