Brunch In French

Happy Wednesday Friends!

This week has been a rough one. I threw out my back at the start of the week so I have been pretty much useless. One thing that will always cheer me up? Brunch! And not just brunch…brunch in french!

First, let’s talk about a french cooking staple: Crème fraîche

Not only is it easy to make, it adds a lot of luxury to a dish. It’s similar to a sour cream. Here’s how you make it!

This absolutely fabulous recipe is from the cookbook “Dinner in French” but makes the most perfect brunch addition. It looks hard but its just as easy as it is fancy. The recipe in the book calls for a Tarragon cream but I was unable to find it so I substituted with basil. I also cut down the recipe from four to two.

“French Baked Eggs with Smoked Salmon and Basil Cream”

what you need:

what you do:

  1. Heat the oven to 400 degrees and brush two ramekins with butter and place them on a baking sheet.

  2. Melt butter in skillet over medium heat. Stir in leeks and 1/4 tsp salt and cook until very soft, around 15 minutes, reduce the heat if need be. Don’t let them brown just become golden.

  3. Stir in three tbsp of cream, the crème fraîche, basil, and lemon zest, and remove from heat. Then, divide mixture among the ramekins.

  4. Crack two eggs into each ramekin and sprinkle with salt and pepper. Float one tbsp of remaining cream on top of each one and bake until yolks are still runny, about 17 minutes. Remove from the oven and let cool slightly. Top each ramekin with salmon and if you’d like capers but I left those out. Serve with bread or toast.

I was so excited to make this dish when I saw it that I only made it to page 16 in this fabulous cookbook. Brunch isn’t brunch without smoked salmon, right?

Carefully Stepping Into 2021…

It’s finally here. Hello 2021. I say that with in a very cautious way. It’s got to be better than 2020, right?….RIGHT?

Anyway, I hope you all had a great holiday season! As always, I’m starting my blogging year by giving an overview of what I plan on doing.

For a long time Fast Fashionista has been broken into three categories. The first part being fashion, home, and lifestyle. This year I’ve decided to really immerse myself in the French Culture that I love so much. I’ve been doing a ton of research on the topic so look for a very french infused vibe at the beginning of the week…

”Perfectly Plated” is usually reserved for Wednesdays. Here, I like to simplify things that look hard, provide easy but also fancy recipes. I always want to get better at cooking and baking and love to challenge myself to never stop learning. That’s one of my favorite things abut this part of my blog. I’m always pushing myself out of my comfort zone.

Fridays are for my Martini Moment. When I started my blog years ago, on Fridays, when I would get home from my job at the time I would make a martini and sit at my little bistro set and just relax. That was originally where this name came from. Over the years its turned into a fun drink recipe. I had a lot of the jobs in my life and a bartender was one of them. I always loved making drinks so that’s what I bring you on Fridays.

All of these posts are coming to you fast. No one has the time to read 300 paragraphs before the recipe or the point of the post.

Since it’s January first, I thought I’d share my resolutions. While some of you hate them and some make them every year, I’m the one who makes them every year because I love a fresh start full of new possibilities. And I’m always aiming for a better me. So here they are:

  1. “Get Dressed” every single day. As a stay at home Mom during the pandemic it is far too easy to stay in sweats all day. For some that might be fine but it only makes me feel frumpy and gross. I’m far more productive (and easier to look at) when I’m put together.

  2. Aim for more stress free moments. That can be quite hard with a one year old, three year old, two dogs, and a Husband to take care of. But sometimes we make our own stress and I’m trying to be a tad more zen.
