No Garden Veggie Left Behind

At the start of every summer I vow that I will not leave a single green bean, zucchini, cucumber, or tomato left behind! I was on my zucchini kick and now on to tomatoes. I know my last post was about as I called it “the pumpkin of summer” but today I’m sharing three very easy, chic ways to use up your fresh tomatoes that aren’t the beloved sandwich with Mayo. Don’t get me wrong this is the top tomato recipe but here are three more.

Baked Feta

what you do:

  1. Preheat oven to 375 degrees

  2. Cover in egg and breadcrumbs and add to a baking dish with oil.

  3. Add in tomatoes, olives, and Thyme.

  4. Bake about 20-25 minutes.

  5. Enjoy!

what you need:

  • One block of Feta

  • Fresh tomatoes

  • Blue Cheese and pitted Kalamata olives

  • Egg

  • Panko breadcrumbs

  • Fresh Thyme


Tomato Tart with Fillo

and Ricotta Cheese

what you do:

  1. Preheat oven to 375 degrees

    2 . Roll out Fillo sheets and brush with oil

    3. In a bowl combine ricotta, and both garlics

    4. Leaving a one inch border spread the ricotta mixture

    5. Lay sliced tomatoes over ricotta

    6. Fold the edges and bake for about 30 minutes

what you need:

  • Fillo sheets I used about 10

  • Tomatoes

  • Ricotta

  • Garlic salt and minced

  • Seasonings you like (I used an Italian blend)


Cheesy Stuffed Tomatoes

what you do:

  1. Preheat oven to 350 degrees

  2. In a bowl mix pistachios, oil, Thyme, garlic, and sea salt

  3. Cut the tops off of the tomatoes and hollow them out

  4. Add oil mixture and then top with fresh mozzarella and put the top back on

  5. Drizzle with oil and pop it them in the oven for 30 minutes

what you need:

  • Three tomatoes (I had one huge one and two smaller)

  • 1/4 cup pistachios

  • 1/4 cup oil

  • Fresh Thyme about seven sprigs

  • Fresh mozzarella

  • Baking dish

For this last recipe I would recommend using more medium tomatoes as they hold their shape a little better. My huge tomato although very delicious, kind of fell apart more than the others. Also, this is a super messy dish. Haha! Well worth it though.

Pair any of these dishes with a wine like a Cabernet and you’ve got yourself some very real deliciousness!

Fall Fashion 2020

Ahhh one of my very favorite posts that I do every year! FALL FASHION! The best time of the year!

This year, I decided to break my Fall Fashion trend list into two parts.

Part one

To be honest, I really don’t like the heat that Summer brings as I once did. Give me all the layers and chicness that comes with Fall! So let’s talk about my favorite trends. Be warned these are my favorites. As always I say, stay true to you and don’t wear a trend just because it’s “in”. At the same time don’t be afraid to experiment with something different. If you hate it, forget it. Here are my front runners for in my opinion, the most anticipated season of them all.

  1. Ruffles

  1. Honestly, this is one of my favorites. It’s such a simple elegant look. Pair a white ruffley top with just about anything and you’ve got an elevated look. Dress up denim or complete a dressy look with satin pants. You really can’t go wrong. Want to kick it up a a notch? Rock it with a vest!

3. Plaid Suits

I’ve talked before about how I love to style a lingerie look but plaid suits are major right now too so I mixed the trends. I’m loving the combination of feminine and masculine for this one! How can’t you kick ass in a power suit? Also, it’s not fall without a hat. Haha!

4. The Cropped Pullover

The crop top got a makeover and I am here for it! There are so many cool ways to style this and I’m pretty much in love. Think about the summer things you can throw one of these on over! Favorite bodysuit, band tee. You name it. Don’t be afraid to get creative with this one. Also, think stay at home style. Cozy and chic.

I’m just dying over this “Ultramarine Green” from the Fall 2020 Color Palette.

8. One Shoulder Dresses

I’ve always loved a one shoulder look and one shoulder dresses were all over the runways. Christian Siriano had the most gorgeous powder pink metallic dress on his runway and I was obsessed. It had one shoulder and a high slit. That was my inspiration. Never heard of him? Look him up his gorgeous gowns are worth the Google.

9. Ruffles Black Tulle

This 2020 we are in is sooo serious. I’m thrilled that tulle specifically black tulle is major right now. It adds some much needed fun to the year! Pair a tulle skirt with a sweater to make it Fall appropriate.

Summer Sips

Few things are better than a fresh, crisp drink on a hot summer afternoon…

This is exactly what I’m bringing you this fine Friday. Not only is this drink crazy refreshing, you get to use some of those fresh cucumbers!

If summer had a fabric it would be white linen. It’s a bitch to keep wrinkle free but oh so beautiful. Since we are just about a month away from the next season I thought it was a perfect moment(…a martini moment if you will), to share this perfect summer sip with you.

what you do:

  1. In a cocktail shaker muddle the slices of cucumber.

    2. Add ice, fresh lime juice, Gin, and St. Germain.

    3. For the garnishes I added the thin ribboned cucumber after I added the ice to the glasses so I could see the shape of them.

    4. Shake, shake, shake! Then add to two glasses filled with ice.

    5. Top with the lime flavored soda water.

    6. Finish the garnish with a lime.

    I hope this weekend if full of fun and fabulous drinks! For me lots of work but don’t worry I’ll make time for a cocktail.
