A Whole Lot Of Fancy

Is this my third Perfectly Plated in a row of zucchini recipes? YES! I can’t help it! My seasonal obsession with this summer veggie continues. This time with a whole lot of fancy! Add this to your next brunch to really kick it up a notch. I will say this recipe isn’t exactly fast but it is easy, chic, and low carb.

The fancy Keto Squash Quiche

Keto Crust

what you need:

1/2 cup coconut flour

3/4 cup almond flour

1 tbsp onion flakes

1 tsp garlic salt, and more to sprinkle

1 tsp garlic powder

2 eggs

2 tbsp butter

what you do:

Simply just add everything to a food processor and pulse. I used a standard pie pan and sprayed it with olive oil. Then, press crust into pan and poke with a fork. Bake on 350 degrees for 15 minutes.

the filling

what you need:

4 eggs

1/2 cup milk

1/2 cup shredded Swiss cheese

1 large or 2 small zucchini

1 large or 2 small yellow squash

1 large carrot

what you do:

  1. Whisk together eggs and milk and pour into baked crust.

  2. Sprinkle cheese

  3. With a vegetable peeler slice zucchini, squash, and carrot and make thin ribbons. Roll them up to make a little rosette and starting from the outside in add them to your filled quiche until they are packed rather tight.

  4. Bake on 350 degrees for 50-60 minutes or until the middle is set and no longer jiggles.

    I did the yellow and green squash first and added in the carrot just for a little color. Not only is this dish pretty it’s delicious, too!

Finding Your Style

“How would you define your style?”

I was once asked this in an interview and it kind of stumped me. I’ve often thought about that question when I look in my closet.

I can say I’m a Gemini through and through so one day I’m likely to be head to toe in black and the next bright colors everywhere! So, how you "find" the style that feels the most like you? This past Spring I did a massive closet purge of things I’ve been hanging on to for the last decade. It felt amazing to make more space and let go of some of those dreadful pieces. But when you’re “finding” your style so to speak, where to start? I’ve come up with five easy ways to really feel good in your own skin and clothes.

  1. Find three adjectives that you feel defines the type of clothes you gravitate towards. For example mine are: glam, edgy, and bold.

  2. Have a few celebs that inspire you and who's style you love. I'm a huge fan of Olivia Palermo and Blake Lively. 

  3. Let go of anything you think you "should like" but don’t. I’ve said this a million times, if you don’t like a trend don’t wear it. And never feel bad for liking a piece. It’s so important to be true to yourself. Your fashion and style should always be evolving just like your personality, life, and mental state. Always getting better so I believe your style should too. Get rid of those old things that just don't suit "you" anymore.

  4. What are three pieces you feel comfortable in? Pieces that just plan make you happy. For me, a cape, high waisted pants, and a bodysuit of some kind. Oh, and I love a vertical stripe and I’m always more comfortable in heels but that’s just my vibe.

  5. I’ve saved the best for last. BE YOU! Make no mistake, I’ll never suggest you be anything other than yourself. This is so very important. Let your freak flag fly!

It’s Zucchini Season!

When I’m gifted fresh veggies from my parents garden, I’m beyond excited! Cucumbers, green beans, kohlrabi (yum!!), and of course, zucchini!!!

I know my Perfectly Plated last week involved zucchini, but it’s that season and I’m always so amazed at how versatile this fabulous summer squash is. I always try to do different things with it and I make zucchini lasagna a lot so I was trying to come up with something else. I decided on ravioli and man I wasn’t disappointed. It’s a fast and easy weeknight meal.

what you do:

  1. Set oven to 350 degrees. Using a vegetable peeler make ribbons with your zucchini.

  2. With four ribbons, two horizontal and two vertical, intertwine them so that you have a solid middle for your filling.

3. Add filling to middle of zucchini

4. Going in a circle, fold the squash over itself to make a square.

5. Add to pan and cook for 20 minutes.

6. Get a glass of wine…kidding…but not really.

This is absolutely one of my favorite recipes I’ve ever made. It will defiantly be going into the rotation. The best part is that it’s guilt free! Low carb, Keto friendly, and crazy delicious!
