Okay guys I'm just going to say it STARBUCKS, GET YOUR SHIT TOGETHER! You don't "run out" of the Pumpkin Spice Latte in SEPTEMBER! That's idiotic. I'm sure not all Starbucks establishments aren't out but mine is and I'm downright offended. So I thought I would share my easy Pumpkin Spice Latte recipe.  

 

  • 1 cup skim milk
  • 2 tbsp pumpkin puree
  • ¼ tsp pumpkin spice
  • ½ tsp vanilla extract
  • 1 tbsp granulated sugar
  • ¼ cup hot espresso coffee (see below)
  • whipped cream for topping (optional)
  • cinnamon powder for topping (optional)
  1. Mix milk, pumpkin puree, pumpkin spice, vanilla extract and sugar. Microwave for 1½ minute, until hot. Whisk until all the ingredients have dissolved.
  2. Put espresso coffee and pumpkin milk mixture in a mug or cup and stir.
  3. Top with 2-3 tbsp whipped cream and a sprinkle of cinnamon powder. Serve immediately. I skipped the whipped cream because, calories.

Fast Tip:

To make espresso coffee: Mix 2 tbsp instant coffee with ¼ cup hot water. Stir well until the coffee crystals have dissolved.

Fall Fragrances

It's finally Friday! Yay! For today's Martini Moment I'm talking my favorite fragrances for fall and some Fast Tips to go along with them. Also, how awesome is it to have fresh Rosemary from my sunroom for a fancy garnish to my V8 martini?

My signature scent is 100% Coco Mademoiselle by Chanel. But every season I like to switch it up a bit. I am simply obsessed with Decadence by Marc Jacobs and came across Zara Black while on a recent shopping trip. One reason that I like scents for seasons is because when I smell it again I'm reminded of that time when I started wearing it. My Chanel brings back wonderful wedding memories and Amber Romance from Victoria Secret will always remind me of being a cheerleader and it being football season. Funny how that works isn't it?

Let's talk Fast Tips:

1. Don't store your fragrances in the bathroom. Humidity, heat, and light will break down the scent.

2. Spritz your perfume right after you get out of the shower but before you get dressed to lock in your favorite smell.

3. Spray a cotton ball and put it in a Ziploc bag for your handbag. You'll be able to touch up mid-day.

Spicy Chic

I've been dying to share this recipe for so long! It's right up my alley too, easy gourmet, fast, low cal, and chic! I absolutely love Gina Homolka from Skinny Taste. Her recipes are always my favorite and this is no exception. .

Spicy California Shrimp Stack

1-1/3 cups cooked short-grain brown rice (from 1/2 cup uncooked)

2 tablespoons rice vinegar

8 ounces cooked shrimp, peeled and tails removed

1 cup diced cucumber (about 1 small)

1 teaspoon chopped fresh chives

1/2 cup mashed avocado (about 1 medium)

4 teaspoons reduced-sodium soy sauce

4 teaspoons mayonnaise

1 teaspoon Siracha sauce

Cook the rice and then add in rice vinegar. Evenly spread the rice on a pan to cool. Cut the shrimp into once inch cubes, then combine cucumber and chives. In a different bowl combine mayo and Siracha.

Spray a 1 cup measuring cup with oil, layer 1/4 cup cucumber

Two teaspoon avocado

1/4 cup of shrimp

and 1/3 cup rice

Carefully turn the cup upside down. If you like sesame seeds (I don't) sprinkle them then drizzle with soy sauce and mayo mix and soy sauce.

This makes for the perfect dish for a dinner party or after a long day of work throwing together for a healthy, delicious dinner.

This dish is only 225 calories per stack. So enjoy!
