Spicy Chic

I've been dying to share this recipe for so long! It's right up my alley too, easy gourmet, fast, low cal, and chic! I absolutely love Gina Homolka from Skinny Taste. Her recipes are always my favorite and this is no exception. .

Spicy California Shrimp Stack

1-1/3 cups cooked short-grain brown rice (from 1/2 cup uncooked)

2 tablespoons rice vinegar

8 ounces cooked shrimp, peeled and tails removed

1 cup diced cucumber (about 1 small)

1 teaspoon chopped fresh chives

1/2 cup mashed avocado (about 1 medium)

4 teaspoons reduced-sodium soy sauce

4 teaspoons mayonnaise

1 teaspoon Siracha sauce

Cook the rice and then add in rice vinegar. Evenly spread the rice on a pan to cool. Cut the shrimp into once inch cubes, then combine cucumber and chives. In a different bowl combine mayo and Siracha.

Spray a 1 cup measuring cup with oil, layer 1/4 cup cucumber

Two teaspoon avocado

1/4 cup of shrimp

and 1/3 cup rice

Carefully turn the cup upside down. If you like sesame seeds (I don't) sprinkle them then drizzle with soy sauce and mayo mix and soy sauce.

This makes for the perfect dish for a dinner party or after a long day of work throwing together for a healthy, delicious dinner.

This dish is only 225 calories per stack. So enjoy!

Have an awesome Thursday! We are so close to the weekend!

More Is More

...and less is a bore right? That's what Iris Apfel says and she is basically my idol so I'm going with it.

It's no secret that I love my Target stops. It's so therapeutic to grab a Starbucks and float around buying things you don't need. That was not the case when I saw this almost perfect fall vest. I was in love! But it needed something...

I mentioned in pervious posts that my Mom is a costume designer/seamstress by trade, so after texting a pic of these vests to my bestie, telling her she needed them too, Mom was my obvious next call.

Me: Mom I need ostrich feathers.

Mom: Do you think I just have those laying around?

Me: Yes. I desperately need them for a vest.

Mom: I have them. Stop here.

Off to my Mom's work I went where she totally saved the day by adding my feathers. I mean how cute is she? Look at that plan of attack in her eyes! I've always felt very lucky to have a Mom who is always adding a little more sparkle to my life.

The moral of this story is that nothing has to stay the way it is. Always look for a way to make something more even if just slightly.

Happy Labor Day!

I hope it greets you with a day of relaxing and a drink in your hand.

My Autumn Bucket List

I'm exhausted.

As you may have gathered from my pervious posts Contemporary Photography had a very very busy, hectic, summer.  With shoots and meeting basically every day our life has been very much all work and little play. Also this is the first Fall/Winter season I'll be able to enjoy in years since I only have one job and no longer work in retail. So we have decided to make the very most of this Fall season and stop and smell the pumpkin spice. What better way to do this than make a fall bucket list?!

I hope this September brings you so much fabulous.

Now who is ready for a PSL light right now?
