Pumpkin All The Things

Including your cocktail!

It’s true that it’s all about the pumpkin flavored coffee right now. But there is something about dark rum and bourbon that just screams Fall. I wanted to come up with a super delicious pumpkin drink. After being gifted some very delicious Carta de Oreo Rum I knew exactly what to make!

The Pumpkin Spice Rum Cocktail

what you do:

  • Add rum and syrup to a shaker with ice

  • Shake, shake, shake!

  • Top with Champagne

  • I used maple syrup for the rim and then dipped in cinnamon and sugar

If you’re familiar with my drink recipes then you know I like to make my own flavored simple syrup to go with the drink I’m making.

Pumpkin Spice Simple Syrup:

1/2 cup water, 1/2 cup sugar of your choice, 1 tsp pumpkin spice.

On medium heat simmer water and sugar until well combined, then add in the pumpkin spice. Stir well and enjoy! You can also put this syrup in your coffee.

*this recipe made about an ounce so if you’re making more than two drinks double the recipe.

Guilt Free Pasta

Boring food does not interest me.

However, a healthy lifestyle does. I’ve been doing a very low carb diet since mid April and not only do I look better than then but I feel better too. This diet has pushed me to do more interesting things with food than I normally would. Almond flour has really become my friend and honestly I’m kind of obsessed with it and how versatile it is. For today’s Perfectly Plated I’m making Keto Ravioli with my very favorite filling.

what you do:

  1. In a food processor mix almond flour, coconut flour, xanthan gum, and salt. Once combined add in apple cider vinegar.

  2. Add in egg while processor runs, then add water. The dough should form and be sticky and not too dry.

  3. Wrap the dough in cling wrap and toss in the fridge for about an hour.

  4. Once the hour is up, put the dough between two pieces of parchment paper, and using a rolling pin flatten out and press a circle cookie cutter or ravioli press to make your actual ravioli. Mine was a two inch circle.

I’m not a huge pasta eater in general but every now and then I crave it. I use this filling for omelettes, crepes, and yep, ravioli. Feel free to add more or less depending on what you’re making.

Once you have your ravioli cut and filling made, scoop it into the middle and pinch the edges. When I made this the recipe made 16 raviolis. After they are assembled and ready to go put them in the freezer for about 20 minutes.

While those are in there, here is the extremely easy sauce I made for it:

what you need:

1/4 cup olive oil

1/4 cup butter

3 tbsp minced garlic (I <3 garlic)

a handful of Thyme

sea salt

what you do:

  1. Melt butter into olive oil and add garlic and Thyme on low heat.

  2. Turn the heat up to medium and add the cooled ravioli. Cook for a couple minutes on both sides.

  3. Add to some fresh veggies (I used multi colored tomatoes) and add a little parm.

I used Thyme because it’s one of my herbs that’s still doing super well out there. I’m trying to give my Basil a break so Thyme it was. I used the tomatoes because they were in my fridge so fell free to use whatever you love.

Styled For Fall

I care not that it’s still technically summer and hot outside, I decorated for fall.

I see many of you have done the same, too! Every year I always try to step it up when it comes to my decorating. Today, I wanted to share two easy, inexpensive and chic ways to elevate your fall decor.

  1. The offset Pumpkin Stack

what you need:

  • A bag plastic dollar store pumpkins

  • Pedestal of any kind. I got mine from Target in the dollar section.

  • Glue gun and glue sticks

    what you do:

    Fire up that glue gun and glue your largest pumpkin to the pedestal and working your way up, glue the pumpkins in an offset way for a little whimsy. This took me about three minutes and its such a fun way to use up some extra pumpkins you have laying around.

    2. The Candle Stick Trick

Any time I’m decorating anything really I play with different heights and since pumpkins are typically short, in this instance I glued them to candlesticks with two different heights. Above my door on the inside of my house is always one of my favorite places to fancy up.

what you need:;

  • Candlesticks you like (I like to work in odd numbers so I used three)

  • Hope you didn’t unplug your glue gun, you need that

  • Cute Pumpkins. I’m obsessed with this navy and white look.

    what you do:

    Simply glue your snazzy pumpkins to the tops to take your look to another level.

    Am I the only one who feels completely unstoppable with a glue gun or spray paint in hand? I didn’t think so! Haha!
