I don’t know about you but I’m feeling like I don’t really know what day it is. Can the holidays never happen on a Tuesday/Wednesday ever again please?

It was a very long nine months for this cocktail lover. I’m excited to be back making fun drinks. I only thought it was appropriate for my first Martini Moment of the year include a little bubbly. I love making all kinds of different drinks but if I’m being honest I always lean towards fizzy ones due to my love of Champagne and Prosecco.

Quick fact. What’s the difference between Champagne and Prosecco? Champagne only comes from Champagne, France and Prosecco from Veneto, Italy.

I like to bring you simple but still delicious cocktails. This one is no different. So easy, fast, and a little unexpected. I’m not typically into too sweet of a drink so I was curious how the Malibu would work with this. The lime juice and cranberry are a perfect balance for the super sweet rum.

What you do:

Simply add lime and cranberry juice, rum, and top with Prosecco or Champagne.

Then, garnish with a lime wheel.

Tada! A delicious drink in just minutes!

Welcome To The Roaring 20’s

Happy New Year Friends!

It sure does feel good to be back. I take a much needed blogging cleanse every now and again. This time it was from being so pregnant and then having Colette Coco, and then all that followed. Not only do I love blogging, but it has also been a much needed distraction.

Every new year I sit down and get my ducks in a row for what I want my blog to look like for the year ahead. Last year, for the fashion part of Fast Fashionista, I focused on Dior’s Fashion Dictionary and had so much fun with it! This year, I’m keeping the same format and concept that I have the previous year only less focus on one thing. Fashion and style which will focus on not only the fashion I so deeply love but also home style and all around “life style”, since this is after all a lifestyle blog.

Perfectly Plated is returning with everything from recipes (some healthy, some maybe not so much), food plating, kitchen hacks and how-tos. Also include anything that may inspire me because being in the kitchen with a glass of vino is my most favorite place to be.

My Martini Moment is also returning but one of my resolutions this year is to really challenge myself with different and unique drinks that are sure to dazzle your guests, for a fun night in, or because its been a hell of week. Which is exactly how this part of my blog started.

Sticking with my blog’s namesake, I’ll be bringing you all of this in a fast nature. Because no one wants to read 37 paragraphs. This will most likely be my longest post. While I’m talking about what this blog is, I’d also like to touch on what it is not. I am by no means an “influencer”. I never wanted to be that kind of blogger (not that there is anything wrong with that type of blog). I refuse to shove any product down your throat. Unless I truly love it of course. I aim for this to be a fun, chic, blog that may help add a little sparkle to your day along the way of your scrolling. All while keeping it real. Sure I’m all about a glam lifestyle but did I just spill coffee literally everywhere while chasing a toddler? Yep, sure did.

It’s Pumpkin Time!

If you were to ask me what an idyllic weekend day looks like then I’d answer a pumpkin candle burning, cool temps outside, Gossip Girl returns on my tv, Sesame Street on in the sunroom, and baking something that also involves pumpkin.

Now that it’s Fall we can really emerse ourselves in all things pumpkin, fall, and everything else that this amazing season holds. And let me tell you I have never, ever, been more excited to see a fall come. It’s Baby Season! T minus nine weeks!

Like many of you, I’m all in for Fall and what’s one of the best parts of it? BAKING!!! Theo and I made you not one but two pumpkin recipes that are also Keto friendly.

Pumpkin Cheesecake

Almond Flour Crust:

1 1/2 cup almond flour

2 egg whites

1/3 cup butter (melted)

1 tsp vanilla extract

1/2 cup mini chocolate chips

Cheesecake Filling:

16 oz cream cheese

1 cup pumpkin puree

1 1/4 cup powdered erythritol (linked under photo)

3 large eggs

1 1/2 tsp pumpkin pie spice

1 tsp cinnamon

1 tsp vanilla extract

Preheat oven to 350 and grease a 9 inch springform pan. Mix together crust ingredients and press into the pan and bake for around 15 minutes. While that bakes, beat cream cheese and sweetener together on low until fluffy. Then mix in pumpkin purée, spice, vanilla, and cinnamon. Next, beat in eggs one at a time. Add batter to pan over crust and bake for around 50 minutes or until the middle isn’t jiggly. Let it cool to room temperature in the pan and for good measure, throw it in the fridge for a couple hours even overnight. Serve with cinnamon or cool whip!

Chocolate Chip Pumpkin Cookies

1/2 cup softened butter

3/4 cup Stevia

1 tsp vanilla extract

1/2 cup pumpkin puree

1tsp pumpkin spice

1 1/2 cup almond flour

1/2 baking powder

1/2 tsp xanthan gum

1/4 tsp salt

3/4 cup chocolate chips

1/4 cup white chocolate chips

Preheat oven to 350, mix in butter, sugar, egg, and vanilla until creamy. Then mix in pumpkin purée and spice. Then, add in almond flour, baking powder, xanthan gum, and salt. Add in chips. Divide up the dough into balls and flatten because the dough won’t spread much. Bake for about 15 minutes, let cool, and enjoy!
