A Good Start

Many have started the year out on a diet or just trying to improve their lifestyle. Sometimes eating healthy can be really daunting and don't know where to start. This is a really good option that I've been just loving. On Sundays I always meal prep mostly because I have to have everything ready to eat at a moments notice when Theo falls asleep. I wanted to share with you what I've been eating for lunch lately. This dish is a great go-to as you can switch up the ingredients to make it what you like. 

As you can see I used:

Cherry Tomato's

Avocado

Cucumber

Quinoa

Red Onion

Shrimp

I love simple recipes! Feel free to tweak this as you see fit. That's the best part it's super versitile! Swap the shrimp to chicken or steak for your protein or the Quinoa for brown rice. I'm currently not eating meat so that's why you'll be seeing more meatless and seafood in my recipes here.

Simple Salmon

These days the "fast" in Fast Fashionista has a whole new meaning. When I have a 15-20 minute window I have to be ten times as fast as I used to be. So dinner through the week has to be really fast...and healthy. This is one of my favorite salmon recipes because it's both. Perfect when you're looking for something with health benefits but so don't feel like making your kitchen a mess or really dealing with dinner in general. It's this simple:

2 salmon fillets

1/2 pound asparagus  

1 1/2 olive oil

2 tbsp minced garlic

salt for taste

lemon slices

parsley for a little flavor on top

Cut your salmon in half if not done already and cut the ends off of your asparagus. On a piece of foil add your asparagus and put a piece of salmon on top. Then, in a small bowl mix together oil and garlic. Sprinkle salt for flavor and add two lemon slices, add your parsley and wrap your foil. Pop it in the oven on 400 degrees for 25 minutes and pour yourself a drink.

Pesto, Please!

Nothing feels more like summer than fresh herbs! My favorite one to do anything with is hands down Basil. You can do so many things with it! I love having pesto on hand because well, it's delicious but also versatile. This fast pesto recipe is perfect for throwing on pasta, adding to your grilled cheese or in this case putting it on salmon! Yum!

  • 1/2 cup parmesan cheese
  • 1 bunch of Basil
  • 1/2 cup olive oil
  • 1-2 Tbsp lemon juice
  • 4 gloves garlic
  • salt to taste

This is as easy as cutting your stems from the Basil and mince your garlic (you don't have to but it helps make it quicker), throw everything minus the lemon and salt in a food processer and mix, then as those.

Any time I make salmon I always have to have pesto with it. It's the perfect addition!
