I don’t know what time you start “Drink O’clock” in your house but we usually make a cocktail around five during this quarantine time. Now usually I’m pouring some vino but I do love to make a fun drink every now and then. I wanted to share this super unique recipe. I’ve said it before and I’ll say it again if you don’t have St. Germain in your bar, you need it add it!

Simply put everything in a shaker with ice and it’s ready to sip!

The Calm Amidst the Chaos

My life has been nothing short of chaotic as of the last three months. Now add in Covid-19 and everyone is feeling the chaos. I really wanted this post to not only be helpful, but maybe also bring a little calmness. For me, I feel so centered in the kitchen and honestly the way every thing is right now many feel like they don’t have control over anything. But in the kitchen you have the ability to call the shots, at least here.

I wanted to bring you a couple very easy recipes, hacks, and ideas for things to make. Obviously these will vary depending on how you’ve stocked up, your diet, or maybe what you have just laying around.

Up first is the Lettuce Turkey Wrap. This one is great because it soooo fast. Ready in a minute. But I’m not going to lie it’s also messy. But a great lettuce hack to make it more of one piece is to cut V’s at the ends and combine them. Much easier to eat. Throw on what you like and you’re in business and can be on you way with the day.

Next, is not exactly fast and I know I’ve talked about making pasta in previous posts but it’s nice to revisit. Having said that not only could this be a fun activity to do with the kids it also only requires two ingredients.

Fresh Pasta

what you need:

  • 1 egg

  • 1 cup flour

    (depending on how much you’re making, equal parts egg and four)

    what you do:

    Simply make a well in your flour with the eggs in the center and slowly start mixing them together until a dough forms. I always get it to a point where I can start kneading it and go from there. I work in sections about the size of my palm and send it through my pasta roller. If you don’t have this attachment, go old school and use a rolling pin. You can cut your noodles or send them through the Kitchen Aid attachment. Then toss the noodles into some boiling water for a couple minutes and the possibilities are endless!

For the this one, I tried to think of a recipe that also only had a few ingredients. Again, this depends on what you’re buying and how you’re stocked up. Try this with chicken too!

Steak and POTATOES

what you need:

  • Pack of steak stripes

  • about 4 potatoes

  • 1 Tbsp oil

  • 3 Tbsp butter

  • 3 Tbsp minced garlic

  • 1 tsp thyme

  • 1 tsp rosemary

  • 1 tsp oregano

    Steak Marinade

  • 1/3 cup soy sauce

  • 1 Tbsp olive oil

  • 1 Tbsp Sriracha (or your favorite hot sauce)

what you do:

  1. Mix the marinade and let the steak sit in it while you start on the potatoes.

  2. In a deeper skillet (I used cast iron but I don’t recommend it for this recipe) heat 1 tbsp oil and 1 tbsp butter. After it melts, add cut potatoes. Cook until they are tender and golden brown. Then put them on a plate to the side.

  3. Add in about 2 tbsp butter, garlic, and herbs. Then throw the steak in and cook it how you like your steak.

  4. Add the potatoes and toss with the garlic butter sauce and steak.

    That’s it! Enjoy!

I’m all about a salad and honestly sometimes it’s so hard for me to find the time to make one so it can be so easy to grab a fatty, high calorie dressing. So I always try to have one made and ready to go if I find a couple minutes to make a salad I have a low cal dressing ready.

Sweet Balsamic Dressing

(4 servings, 135 cal)

  • 1/4 cup extra virgin olive oil

  • 2 tbsp balsamic vinegar

  • 1 tsp Dijon mustard

  • sprinkle some garlic salt

    Shake, shake, shake! Put it in the fridge. Pour over a delicious salad.

Colette Coco’s Garderie

When I found out I was pregnant with Colette I knew in my soul it was a girl. I was so sure that I knew I needed to know right away so I went and had a blood test done at nine weeks to tell the sex of the baby. I waited 48 hours to confirm what I already expected. MK was working late so I waited until he got home to open the email saying we had a girl on the way.

I immediately started thinking about her room. Since having done my closet we knew that we had the space to blow out the ceiling just like we did for Theo’s. With his room I felt like everything flowed and I had a very clear vision from the start. With Coco’s all I knew was that I wanted it to feel light and bright. But before we could start designing we had to do some demo since we were starting from scratch.

Here is a funny story. When we didn’t know if Theo was a boy or girl MK and I had each picked out a crib from Restoration Hardware one for a girl and one for a boy. They ended up being the same ones because we have very similar tastes. I’ve always liked the name Colette and it just so happened that the name of her crib is “Colette”.

When I came across the feather chandeliers I really got into a rhythm of what I wanted her room to look like. Obviously her room needed feathers. I always love a good accent wall and this gorgeous bubble gum pink color just spoke to me. It’s got such a pretty sheen to it and adds the perfect pop of girly to the room.

Many years ago MK and I came across a fantastic band called Great Caesar. We fell in love with their songs and decided to use one for her room. We always loved that Theo had a song for his room (Forever Young by Bob Dylan) and wanted Colette to have one too. Also, we couldn’t do her room without including some of her namesake. MK and I went back and forth designing the four pieces of artwork above her changing table.

I searched the entire internet for a teal, tufted, cozy, not rocking chair that would fit through the door and I was absolutely elated when I found it! I was also really happy with the teal, white, and pink color scheme. I really love personalized things. So along with her sheets (some say Coco and some say Colette) we decided to use the ledge we made with her name. It was so fun for me to do this customized touch on our girls room.

Once we were finally able to show Colette her room, we were very, very excited to show her the true finishing touch on her room. I had my eye on this crown long before I knew I was having a daughter and hoped we would be able to use it one day. But after everything she’d been through, and a great idea from my Dad it was decided that she was no regular princess. She is a warrior too. We were thrilled to have that also represented with a sword through her crown.
